Ian has spent most of the past decade running a diverse array of beverage programs throughout Michigan. He enjoys creating drink menus that complement the food and the experience, as well as bringing in a wide variety of spirits, beers, and wines that are great on their own merit. His desert island drink of choice would be a pour of rye whiskey with an IPA back.
The beverage program at Otus Supply is all about flavor, balance, and creativity. Our team creates truly scratch cocktails. We make everything possible in house including bitters, tonics, sodas, shrubs, and ginger beer. Artificial sugars and chemicals are not used. We also source whiskey by the barrel from around the country, and maintain a diverse and rare whiskey library.
Our wine program is unique and boutique, Italian forward while focusing on smaller regions around the world whose terroir enhance the food experience. The cellar list favors winemakers who take a natural view of the process and let the wines express a sense of place. Many of the dishes at Otus Supply are inspired by traditional recipes in the same areas, and thus play along perfectly.
The beer program includes a curated 32 draft selection that is always rotating, alongside a cellar beer program that only gets better with age. Michigan will always have a strong presence on our taps, with great consideration for the classic German, Belgian, French, Italian, and English - and the best in American craft.
